I made something a few days ago that I really wanted to share with you!
And then I loved it so much I ate it…and it was all gone, and I had nothing left to share.
But today, I made it again- and I thought maybe you might try it.
It’s super easy (otherwise I definitely would not have made it twice). Here are the ingredients:
- Roughly 6 brussel sprouts (if you don’t like brussels, you can always use broccoli…unless you’re allergic…in that case…just substitute with whatever! :)) I sliced them into quarters.
- 3-4 sliced baby carrots
- About 10 slices of cucumber (I leave them as whole slices, and I like to make them thin, but I know that it is also common for people to slice cucumbers into fourths).
- 1 whole diced Roma tomato
- Sea salt to taste (I am very liberal with my sea salt)
- 3 or 4 or 7 dashes of pepper (optional, but suggested)
- 1/4 tsp. ground ginger (this was a test, and it turned out awesome! It gave just a little kick!
I know that sometimes it is beneficial to flash fry some vegetables, and in other cases it isn’t, and I do love sauted and baked brussels, but I decided to try them raw and WOWIE, it was a great choice. Sometimes less really is more. Basically, just shove all that shit in a bowl together in no particular order*, stir it up and voila! YUM!
*Pro tip: save the tomato for last so that your cutting board isn’t all juicy and messy while you cut everything else.
The other day I made Coconut Jasmine Rice** with Pineapples and Teriyaki Chicken. I fucking love that recipe. My mom used to make it all the time.
**When I made the Jasmine Rice, and when/if you ever look up a recipe for it – it will call for a certain amount of water. Pro Tip: instead of using all (just) water and coconut milk to make the rice, drain the juice from the pineapple (or canned pineapples) and use part pineapple juice/part water along with the coconut milk. This adds a little more tangy-ness and also some more sweetness to the rice.
To make a long story short, I put some of that deliciousness in with my vegetable salad. And the pineapple pieces kinda add to it!
